How should I fix a clean water leak under my concrete slab?

So here is my situation: I bought my house less than a year ago and yesterday my wife heard a running water sound in one of our bedrooms. I investigated the situation by isolating areas and have come to the conclusion that our clean water line has a leak under our concrete slab. In the sellers disclosure they noted that they had a similar problem that occurred 2 years ago and then again 1 year ago. Both times they stated that they filed an insurance claim and had the leaking pipe fixed. Considering that the pipes 15 year old copper pipes and we have about 25 pine trees on our lot causing the soil to be very acidic. Should I just abandon the existing under how water supply piping and run pvc water supply up to my attic and reconnect all of my plumbing? Or should I just a plumber out here for a 3rd time for the same problem to fix the leak.
