Plumbing question - can PEX be used as an outdoor underground line?

I have a copper tap-out from the street, with a spigot at the end, that I use to water my garden plot. I want to install another spigot about 60 feet away, and thought about using PEX or some type of flexible underground plumbing, to avoid so much digging and the outrageous price of copper. Here in Charleston, SC, we don't have heavy frosts, so I think I'd only need to go down about 20 inches. Any ideas for some type of flexible underground outdoor plumbing that I can tie into my copper line? Thanks!
