What causes indoor plumbing to "knock"?

I thought this was a issue with galvanized pipes, not copper. Is this a serious problem? Now that it was been determined by all of you what the problem is, it dawned on me that the DWP was working on the water lines and shut off the water for a couple of hours. Is this something that the DWP should fix?
